Abstract
Jawa Barat, khususnya Kabupaten Bandung, merupakan sentra sapi perah dengan produksi susu yang tinggi. Rantai pasok susu merupakan faktor penting yang perlu diperhatikan agar pasokan tetap stabil. Tujuan penelitian ini adalah untuk mengetahui sistem logistik susu di Kabupaten Bandung, khususnya dari segi rantai pasoknya. Parameter yang diamati adalah aliran rantai pasok, titik kritis dalam rantai pasok susu, dan peran aktor dalam rantai pasok susu di Kabupaten Bandung. Pengamatan deskriptif dilakukan dengan menggabungkan data primer dan sekunder. Hasil pengamatan menunjukkan bahwa aliran barang dalam rantai pasok susu terdiri dari peternak, TPK (Tempat Pengumpulan Kelompok), Koperasi/MCP, Industri, Distribusi, dan Konsumen. Aliran informasi dalam rantai pasok bersifat dua arah, dari hilir ke hulu dan dari hulu ke hilir, mengalir di antara para aktor yang terlibat dalam rantai pasok, yaitu peternak, koperasi susu, industri pengolahan susu, pedagang sapi potong, distributor, pengecer, dan konsumen. Terdapat tiga jenis pola saluran dalam aliran keuangan dalam rantai pasok. Para pelaku yang terlibat dalam rantai pasok susu di Kabupaten Bandung terdiri dari peternak, koperasi, pemerintah, industri pengolahan, dan pedagang. Titik kritis dalam rantai pasok susu dibagi menjadi tiga bagian, yaitu produksi, distribusi, dan penjualan.
