Abstract
Le site de la ferme Cadet (CeEt-960) a révélé une importante collection faunique datée principalement des xviiie et xixe siècles. L’analyse zooarchéologique a mis en évidence la prédominance des animaux domestiques, notamment le boeuf, le porc et les caprinés, indiquant une forte dépendance à l’élevage pour l’alimentation. L’étude des os a révélé des pratiques de sélection de pièces de viande, tandis que la présence d’animaux jeunes suggère des activités d’élevage sur place. La faune sauvage, bien que présente, jouait un rôle marginal dans l’alimentation. Cette recherche enrichit notre compréhension des pratiques agricoles et alimentaires à la fin du Régime français et au début du Régime britannique et souligne l’importance de la zooarchéologie pour explorer les relations entre humains et animaux à la marge de la ville de Québec durant cette période.
