Abstract
La croissance globale dans le monde au cours des dix dernières années, liée à l'augmentation de la population et des revenus moyens, a été plus importante dans les pays en développement où les revenus individuels de départ sont faibles. Toutefois, dans les pays où les revenus individuels sont les plus élevés (États-Unis, Canada, UE, Japon), la consommation individuelle de viande a peu évolué depuis 1990. Dans l'UE, la consommation globale de viande augmente de plus en plus légèrement, avec un passage du bœuf et de l'agneau à la volaille. Néanmoins, le niveau global de la consommation de viande, la part relative du bœuf, de l'agneau, du porc et de la volaille, et les tendances sont toujours différents entre les différents pays de l'UE. En Italie, en Allemagne et en France, les données du panel des ménages montrent de grandes différences dans le comportement des consommateurs, en particulier depuis la crise de l'ESB, et dans la segmentation des consommateurs.
