A new power plant in the French Alps is taking the byproduct of cheese production and turning it into enough electricity to fully power a town of 1,500 people. The cheese-based power station works like this: After regular milk is used to make Beaufort cheese, there's leftover cream and whey. The cream is used for other dairy products, like butter and ricotta cheese, while the whey goes to produce a mixture of carbon dioxide and methane known as \Bio-Gas\. Biogas is made in much the same way gas is formed inside cows' stomachs: the whey gets added to a tank with bacteria which produces methane as part of the natural fermentation process. The gas's then fed into an engine that heats water, generating electricity which's then sold to the energy company EDF. The Independent says the process uses 99 percent of the ingredients to make Beaufort cheese, and the only waste produced is clean mineral water. And while the plant, which opened in October, isn't the first power plant fueled by cheese, it is one of the world's largest, according to the Telegraph. Since the project's operator, Valbio, built its first prototype cheese-based power station a decade ago, 20 other similar small-scale plants have been built in Europe and Canada, And plans're already in place in Italy, Australia, Brazil and Uruguay to generate electricity from cheese in the future.
