La croissance des achats de produits agroalimentaires en ligne, propulsée par la pandémie de la COVID-19, a été accompagnée par une demande accrue des emballages, suscitant des préoccupations à la fois sanitaire et environnemental. L'emballage se doit de protéger le produit et de conserver son intégrité tout en ayant le moindre impact possible sur l'environnement. Bien que l'emballage joue un rôle crucial dans la perception et le comportement d'achat des consommateurs, peu d'études ont examiné l'arbitrage opéré entre ses attributs sanitaire et environnemental, surtout dans le contexte particulier d'une pandémie mondiale. Ce mémoire explore alors cette lacune en utilisant un modèle d'expérience de choix discrets pour analyser les préférences des consommateurs québécois en matière d'emballage pour les repas prêts-à-manger commandés en ligne. Les résultats montrent une préférence marquée pour l'aspect sanitaire de l'emballage et une sensibilité variable à l'attribut environnemental selon l'âge. Particulièrement, la tranche d'âge 18-34 ans se distingue par son intérêt accru pour les caractéristiques environnementales de l'emballage. Cette étude offre des perspectives éclairantes pour les acteurs du commerce électronique agroalimentaire, mettant en lumière la complexité des attentes des consommateurs vis-à-vis des défis sanitaires et environnementaux liés à l'emballage.
