Abstract
Se efectúo el análisis de la composición química de la cáscara de sacha inchi (plukenetia volubilis) y se plantean alternativas para su uso en el sector agroindustrial. Se determinó el contenido en algunos minerales y metales pesados de la cáscara en mención, a través del proceso de espectrometría de emisión óptica de plasma, que se acopló inductivamente (ICP- OES); así mismo, se estableció su composición proximal, con el fin de predecir su utilidad en el sector agroindustrial. Los resultados obtenidos mostraron que la cáscara está formada, principalmente, por fibra (77,8 %) y una alta concentración de potasio (3736.2 mg/kg), calcio (2.668,2 mg/kg) y magnesio (684,7 mg/kg). También se analizó la solubilidad de las cenizas de la cáscara, a diferentes niveles de pH, estimando la disponibilidad de los micronutrientes contenidos en ella para su posible uso en la producción agrícola.
