Ce mémoire se consacre à la renaissance culinaire du Québec après la Seconde Guerre mondiale, un renouveau gastronomique accentué par la Révolution tranquille, l’Exposition universelle de Montréal, la création de l’Institut de Tourisme et d’Hôtellerie du Québec, la montée du nationalisme québécois, la Nouvelle Cuisine et la modernisation de l’État québécois. La construction d'une nouvelle identité nationale passa alors par l'affirmation des différences historiques, politiques, linguistiques et culturelles de ce bastion francophone d’Amérique du Nord, y compris sa gastronomie. Dans un premier mouvement, des chefs européens firent de la Belle Province un repère gastronomique fidèle à la grande tradition culinaire française. Puis dans un désir d’indépendance, une première génération de chefs propriétaires québécois développa une gastronomie et une culture culinaire à son image. Le Québec gourmand releva donc un double défi d'émancipation. Incapable de se représenter comme une collectivité neuve, la bonne société embrassa d’abord la cuisine française pour se distinguer de la cuisine canadienne. Les élites entretenaient alors le lien colonial avec la France. Par la suite, l’invention d’une gastronomie nationale vint répondre au besoin populaire d’établir un marqueur identitaire indéniable : une cuisine souveraine, libérée de la tutelle française. Cette recherche retrace donc l’histoire de la gastronomie québécoise. Elle fait état du parcours singulier des chefs et de la cuisine de la Belle Province de 1945 à nos jours, et plus particulièrement du tournant des années 1990, alors qu’émergea une identié culinaire propre au Québec.
