Abstract
Opinnäytetyömme on selvitys kestävän kehityksen tilasta kahdelle Pohjois-Karjalan Osuuskaupan toimipisteelle, ABC Kanervalalle ja Coffee House Joensuulle. Kestävän kehityksen tarkastuslistan tavoitteena on kehittää ravitsemispalvelualan yksiköitä kestävämpiin valintoihin arjen toiminnoissa sekä hankinnoissa. Tarkoituksena on säästää luontoa ja edistää yritysten taloudellista tilaa. \n \nTavoitteenamme oli selvittää yksiköiden tämänhetkinen kestävän kehityksen tila kestävän kehityksen tarkastuslistaa apuna käyttäen ja sen perusteella kehittää yksiköiden toimintatapoja. Tutkimus tehtiin viikoilla 10–11 molemmissa toimipisteissä kahden viikon ajan. Kestävän kehityksen tarkastuslistan täytön ohessa punnitsimme jätemääriä, seurasimme ruokahävikkiä, selvitimme toimipisteiden energian- ja vedenkulutusta sekä tarkastelimme lähi- ja luomuruoan käyttömahdollisuuksia. Työmme tuloksena laadimme toimipisteille kehitysideat kestävän kehityksen tilan parantamiseksi. Opinnäytteemme on pääasiassa tutkimuksellinen, laadullinen opinnäytetyö. \n \nTutkimustulokset osoittivat, että toimipisteiden kierrätysmenetelmissä on kehittämistä ja henkilökunnan tietoutta kestävään kehitykseen tulisi lisätä. Toimipisteissä tulisi olla selkeät jätteiden lajitteluohjeet. Tutkimuksessa painottui kestävän kehityksen ekologinen, taloudellinen sekä sosiaalinen näkökulma.
