Abstract
A salmonelose é uma das principais zoonoses para a saúde pública em todo o mundo, pelas suas características de endemicidade, alta morbidade e, principalmente, pela dificuldade da adoção de medidas de controle para evitar o perigo de infecção dos consumidores.Essa doença é causada pelo consumo de alimentos, especialmente de origem animal, contaminados por bactérias do gênero Salmonella, como aves, ovos, carnes, leite e produtos lácteos.A ampla distribuição de bactérias do gênero Salmonella entre os animais, a existência de portadores assintomáticos, a habilidade de permanecer no ambiente e nos alimentos são fatores que contribuem para que esse patógeno seja o agente etiológico mais frequente, em casos e surtos de infecção gastrointestinal veiculada por alimentos em vários países.Leite e queijos têm merecido destaque como veículos de Salmonella spp., sendo os queijos frescais e/ou artesanais os que apresentam maior perigo de causar salmonelose e já foram envolvidos em vários surtos.A Embrapa Agroindústria Tropical, ciente da importância da segurança de alimentos, pretende, com esta publicação, ressaltar a natureza do tema e sua abordagem científica, dispondo a estudantes e profissionais uma revisão atualizada acerca da ocorrência de contaminação, casos e surtos de salmonelose associados ao consumo de leite e produtos lácteos.
