El països de l'àrea mediterrània tenen a l'abast aliments suficientment diversifi cats per practicar una alimentació sense carències i equilibrada.Dissortadament, la manca d'ensenyament i d'informació d'aquests temes a la població del nostre país comporta que a la pràctica això no es compleixi.Però arreu dels Països Catalans es manté el costum de menjar freqüentment alguns dels plats de la cuina tradicional, senzilla, casolana, que resulta molt atractiva, variada i nutritiva.Si hom es pregunta quins són els seus efectes dietètics, podem dir que, en alguns casos, com l'escalivada, són excel .lents: permeten tenir el cos ben alimentat i fer una dieta equilibrada.En altres, la cosa es complica per l'excés de greixos especialment.L'objectiu d'aquest treball és doble: d'una part, el millor coneixement dels nostres hàbits alimentaris, i de l'altra, oferir una solució acceptable per a ambdues parts: recomanacions dietètiques amb valor gastronòmic.
