Au Canada, les maladies cardiovasculaires sont la principale cause de mortalité. L'amélioration des habitudes alimentaires est l'une des recommandations prodiguées par les programmes de prévention et traitement des maladies cardiovasculaires. Depuis quelques années, une attention particulière est portée envers l'alimentation méditerranéenne pour ses effets bénéfiques sur la prévention et le traitement des maladies cardiovasculaires. Jusqu'à présent aucune étude n'a comparé directement dans un contexte contrôlé, la réponse à l'alimentation méditerranéenne chez les hommes et les femmes. Ainsi, l'objectif de ce mémoire était d'étudier les différences sexuelles au niveau des changements du profil de risque cardiovasculaire en réponse à une alimentation méditerranéenne traditionnelle. Cette étude démontre que l'alimentation méditerranéenne, dans un contexte d'intervention nutritionnelle contrôlée, est associée à des changements significatifs du profil lipidique chez les hommes comme chez les femmes et à des améliorations significatives des variables insulinémiques chez les hommes seulement. Ainsi, considérant le profil de risque cardiovasculaire dans son ensemble, nos résultats suggèrent que les hommes pourraient bénéficier davantage de l'alimentation méditerranéenne dans un contexte contrôlé que les femmes.
