"La friabilidad de malta es utilizada para medir la modificación del endospermo de cebada durante el malteo. Este parámetro se ha propuesto como una herramienta útil para la evaluación de material avanzado en programas de mejoramiento genético de cebada maltera, por su correlación con factores de calidad. El objetivo de este trabajo fue evaluar el análisis de friabilidad de malta en la predicción de calidad durante el mejoramiento de cebada maltera y determinar el valor mínimo para la selección de genotipos. Las muestras evaluadas en dos ciclos agrícolas de riego (invierno 2008- 2009 e invierno 2009 -2010) fueron las líneas avanzadas (>F7) M171, M173, M174, M175, M10542 y las variedades Adabella, Alina, Armida, Esmeralda y Esperanza; cultivadas en Celaya, Guanajuato, México. La friabilidad de malta estuvo correlacionada con extracto molienda fina (r= 0.631), proteína total (r= -0.812), poder diastásico (r= -0.506) e índice de Kolbach (r= 0.522); sin embargo, Esmeralda, Esperanza, M171 y M10542 no tuvieron correlación con extracto molienda fina (EMF) e índice de Kolbach (KI). Se observó amplia variación de friabilidad de malta (30-85%) debido principalmente a los cambios de proteína, por lo que no fue posible determinar el valor mínimo para la selección de genotipos durante el mejoramiento en función de los valores observados de EMF, viscosidad del mosto, KI y la diferencia de extractos. Los cambios significativos de friabilidad (>20%) y EMF not a reliable tool in discriminating genotypes for malting (>0.98%) se presentaron con variación de proteína mayor barley breeding, where protein changes are common among a 1.40%.
