Abstract
Trong phạm vi nghiên cứu này, chúng tôi đã tiến hành khảo sát chất lượng hạt ca cao lên men trong điều kiện tự nhiên, những biến đổi sinh hoá và mật số các vi sinh vật chủ yếu trong quá trình lên men. Kết quả nghiên cứu cho thấy hạt ca cao lên men trong điều kiện tự nhiên cũng có chất lượng chấp nhận được nhưng không đồng đều giữa các lớp trong khối ủ, phụ thuộc nhiều vào điều kiện thời tiết. Đây là một chuỗi các quá trình lên men của các nhóm vi sinh vật nối tiếp nhau. Đầu tiên là sự phát triển của nấm men, tiếp theo là vi khuẩn, cuối cùng là sự phát triển của một số nấm sợi trên bề mặt của khối ủ. Chất lượng hạt ca cao sau lên men tốt nhất trong điều kiện nhiệt độ lên men ở 40 oC, độ ẩm nguyên liệu là 82 % và thời gian lên men trong 7 ngày.
