Abstract
Durante los últimos años la actividad económica del servicio de alimentos y bebidas en la ciudad de Azogues ha tenido un crecimiento de gran magnitud, por lo cual, se ha visto conveniente la creación de una propuesta para la futura apertura de un bar-restaurante temático en comida fusión ecuatoriana-mexicana, que tiene como finalidad emprender un negocio propio, en el cual, se pueda aplicar los conocimientos aprendidos durante la carrera, y a más de un interés económico se busca ofrecer una nueva propuesta de restauración, creando a la vez nuevas plazas de trabajo para los profesionales de la gastronomía. \nLa importancia de esta monografía es buscar la manera de satisfacer las necesidades del público demandante, que buscan la oferta de diferentes propuestas gastronómicas y al descubrir la poca oferta en el tema se ha visto conveniente la creación de un bar-restaurante con comida fusión ecuatoriana-mexicana. La información resultante a más de ser una investigación, sea una fuente de información concreta para analizar la factibilidad de este negocio, y la futura puesta en marcha de la misma. \nCon este proyecto se busca profundizar los aspectos relacionados a la concepción, establecimiento y funcionamiento de esta nueva propuesta gastronómica, para lo cual se presentará un análisis de mercado y factibilidad, estructuración de la organización gastronómica, marketing, y un análisis financiero.
