Abstract
This dissertation explores the role of moral aspects in explaining consumers’ interpretation and use of contested nutritional, environmental and ethical evidence regarding food. After building a conceptual framework (Chapter 2), Chapters 3 and 4 investigate the topic from an empirical perspective across two countries, Germany and Canada. Results show the importance of considering moral aspects when studying consumer attitudes and decisions.
