Abstract
Mô hình hộp đen có chứa tham số vật lý có ý nghĩa được sử dụng cho việc phỏng đoán trực tuyến nhiệt độ sản phẩm từ nhiệt độ môi trường gia nhiệt trong các quá trình chế biến nhiệt độ cao thực phẩm chứa trong bao bì. Thí nghiệm ?bước? được thực hiện với nhiệt độ môi trường gia nhiệt được nâng từ 60oC tới 115oC. Nhiệt độ của 2 loại thực phẩm dạng rắn dẫn nhiệt hoàn toàn và sản phẩm dạng rắn dẫn nhiệt không hoàn toàn chứa trong bao bì và môi trường được ghi nhận bằng các cảm biến loại T kết nối với máy tính thông qua bộ chuyển đổi tín hiệu. Thuật toán "simplified refined instrument variable" (SRIV) được lựa chọn cho việc xác định các tham số của mô hình. Kết quả hàm truyền bậc 1 thu nhận từ dữ liệu động nhiệt độ môi trường và sản phẩm trong thời gian xử lý nhiệt có hệ số tương quan cao, sai số thấp được lựa chọn. Đồng dạng hàm truyền, tham số tìm được trong hàm truyền có chứa tham số vật lý liên quan đến hệ số truyền nhiệt bề mặt có khả năng sử dụng trong phỏng đoán nhiệt độ sản phẩm trong quá trình gia nhiệt.
