Abstract
Descripción: El curso de técnicas culinarias intermedias, permitirá al estudiante profundizar y ampliar conocimientos de los insumos y técnicas culinarias correspondientes al conocimiento de proteínas, carbohidratos y pastas, así como practicar las reglas de organización operativa de producción con respeto de las reglas de seguridad e higiene en cocina. Propósito: El curso es de carácter teórico ¿ práctico, dirigido a los estudiantes del tercer ciclo. Busca contribuir al desarrollo las competencias específicas de Chef Ejecutivo y la competencia general de pensamiento innovador, ambas correspondientes al nivel 1. Para los alumnos de la carrera de Gastronomía y Gestión Culinaria, el curso les dará las bases para desarrollar a futuro, los cursos de Cocina Tradicional de Local a Global; Técnicas Culinarias Avanzadas y otros cursos que desarrollan técnicas especializadas.
