Abstract
En el trabajo se presenta un estudio detallado del sangacho de atún, de las cuales se identifican cada una de las materia primas utilizadas para el desarrollo de los mismos. para ello se tomó como base, flujos de procesos para enlatar el sangacho de atún y se le agregó un nuevo flujo para el procesamiento. En este punto se identificó el tiempo de escaldado, consiguiendo el sabor, color y textura agradables al paladar. El correcto manejo de los tiempos y temperaturas de esterilización establecidos en la bibliografía especializada en el manejo de enlatados, así como la aplicación de buenas prácticas de manufactura, permitieón obtener un producto enlatado de excelente calidad como lo demostrarón los análisis físicos, químicos, microbiológicos y sensoriales a los que fue sometido el producto en mención. En el proceso investigativo fue de gran aporte la utilización de material bibliográfico, revistas científicas, manuales de pesca y visitas de campo a una Empacadora de atún. Los resultados de los análisis físicos, químicos, microbiológicos, fueron comparados parámetros establecidos en las Normas INEN (Instituto Ecuatoriano de Normalización) y de AOAC (Association of Official Agricultural Chemists). determinándose que los mismos se encuentran dentro de los rangos establecidos. Los mismos demuestran que el producto elaborado es apto para el consumo humano a partir de su composición nutricional y grado de inocuidad alimentaria. Las evaluaciones sensoriales realizadas demostraron que el producto tiene la calidad adecuada como para incitar a su compra en caso de llegarse a comercializar.
