Les mortiers sont essentiellement constitués de liants comme la chaux et le ciment combinés à du sable, àde l'eau et à des adjuvants. Pour les travaux de restauration des maçonneries anciennes, on utilise de plusen plus des mélanges de mortier de rejointoiement dont le liant principal est la chaux, surtout dans le butd'assurer la compatibilité avec le mortier d'origine (pour le respect des caractéristiques historiques etesthétiques et des propriétés des matériaux). Les mortiers dont la chaux constitue le principal élément duliant ont moins de retrait et offrent une flexibilité et une porosité supérieures à celles des mortiers dont leliant principal est le ciment portland (courant dans la maçonnerie contemporaine) et peuvent donc mieuxs'accommoder de mouvements mineurs du mur sans se fissurer. Lorsqu'il s'agit de mouvements plusimportants, des fissures sont plus susceptibles de se produire à l'intérieur des joints de mortier que dansles éléments de maçonnerie, ce qui est préférable, simplement parce qu'il est plus facile et moins coûteuxde refaire les joints de mortier que de réparer ou de remplacer des briques ou des pierres endommagées.Aujourd'hui, de nombreux mortiers de restauration font appel à un mélange de chaux et de cimentportland (ex. : 1 partie de ciment portland, 2 parties de chaux et 9 parties de sable en volume). Ons'intéresse de plus en plus aux mortiers de chaux pure et de chaux hydraulique (voir encadré).
