Trendit Ravintolamaailmassa : Osuuskauppa PeeÄssä Uniikkiravintolat

Abstract
Tämän opinnäytetyön tarkoitus oli tutkia, millainen vaikutus trendeillä on ravintola-alalla. Tutkimukseen valittiin kuusi ravintola-alan trendiä, joista kolme on ruoka- ja kolme juomatrendiä. Kyseiset trendit ovat fleksitaarinen ruokavalio, vastuullisuus ruoan sekä juoman näkökulmasta, sesonkiraaka-aineet ja kaudentuotteet, alkoholittomuus sekä pienpanimojen tuotteet. \n \nTutkimuksen tavoitteena oli selvittää, onko Osuuskauppa PeeÄssän uniikkiravintoloiden hyödyllistä ottaa kyseiset trendit mukaan toimintaansa. Haluttiin myös selvittää, onko työntekijöillä ja ravintolalla vaikutusvaltaa valita mitkä trendit otetaan toimintaan vai meneekö kaikki ketjun päätöksien mukaan. Lisäksi tutkittiin, kuinka haastateltavat kokevat valitut trendit ja niiden vaikutuksen jokapäiväisessä toiminnassa. \n \nOpinnäytetyön tutkimus toteutettiin kvalitatiivisesti eli laadullisella toteutustavalla haastatteluja hyödyntäen. Osuuskauppa PeeÄssän uniikkiravintoloita oli mukana viisi. Jokaisesta ravintolasta haastateltiin henkilökuntaa. Haastatteluiden tulokset koottiin yhteenvedoksi litteroitujen haastatteluvastauksien pohjalta. \n \nHaastatteluiden perusteella keskeisimpiä esille nousseita aiheita ovat kasvispainotteisen ruokavalion arvostuksen nousu sekä alkoholittomien tuotteiden myynnin kasvaminen. Nämä trendit näkyvät ravintolatyöntekijän arjessa jo nyt merkityksellisesti, mutta tulevat tulevaisuudessa olemaan mahdollisesti vielä isommassa vaikutuksessa toimintaan. Haastatteluiden tuloksista selvisi myös, että ravintoloiden päätösvalta trendien suhteen on pieni. Päätökset tulevat ketjun mukaan.
