Abstract
Với mục đích tìm ra các dòng nấm men thuần chủng có đặc tính lên men rượu tối ưu từ nước thốt nốt, nghiên cứu phân lập nấm men từ nước thốt nốt ở huyện Tịnh Biên, tỉnh An Giang được tiến hành trên cơ sở khảo sát ảnh hưởng của thời gian thu hoạch (buổi sáng, buổi chiều) và điều kiện xử lý nước thốt nốt trước khi thu hoạch (không xử lý, xử lý metabisulfite sodium và xử lý gỗ sến) đến sự hiện diện của nấm men trong nước thốt nốt. Kết quả nghiên cứu đã thu nhận được 21 dòng nấm men từ nước thốt nốt với các điều kiện xử lý khác nhau. Ngoài ra, thời gian thu hoạch nước thốt nốt buổi sáng và buổi chiều có ảnh hưởng đến khả năng hiện diện của các dòng nấm men trong nước thốt nốt, các điều kiện xử lý nước thốt nốt không ảnh hưởng đến khả năng phân lập nấm men.
