Abstract
Melceü't -Tabbâhin (Aşçıların Sığınağı ) adlı eser, Mehmet Kamil tarafından 1844 yılında basılmış olan ilk Türk yemek kitabıdır. Bu eser Mehmet Kamil’in uzun araştırmaları sonucunda ortaya çıkmış olan yeni tarifleri Türk mutfağına kazandırmıştır. Kitap basıldığı dönemde oldukça ilgi görmüş ve 44 yıllık süreçte baskısı dokuz defa yenilenmiştir. Batı usulü yemekler ilk kez bu kitapta yer almış ve kendisinden sonra basılan yemek kitaplarına temel teşkil etmiştir.
