An empirical analysis of the dimensions of consumer food quality perception in Canada

Abstract
The issue of branding in general, and branding of food produced specifically, is complex. Successful branding requires thorough consideration of the views and perceptions of consumers. This study assesses the factors which influence consumers' overall perceptions of the quality and safety of foods produced in Canada. Since existing food quality frameworks focus on perceptions of a specific product, an aggregate food quality perception model is developed. The model is subsequently implemented using data from a 2006 consumer survey data for Canada. Overall, Canadian consumers have a favourable perception of the overall quality and safety of foods produced in Canada. Results suggest that safety is not the uppermost dimension of food quality amongst Canadian. The results further suggest that Canadian consumers associate freshness of food with quality. Demographic factors are observed to have limited impact on Canadian consumer's food safety perception compared with food quality.
