Abstract
Le café parisien est célèbre pour avoir joué un rôle essentiel dans l’histoire de la sociabilité française. Cette thèse étudie comment ces endroits mythiques ont facilité tant de mouvements intellectuels et comment le modèle de sociabilité qu’ils ont créé en est venu à représenter un élément constitutif de la culture française. Elle examine en particulier l’évolution des cafés parisiens et de la sociabilité française à travers trois siècles tout en explorant l’avenir du café traditionnel aux prises avec l’influence de la mondialisation et l’internet.
