Abstract
Emblème de la cuisine québécoise connu internationalement, le smoked-meat occupe une place particulière dans l’identité culinaire montréalaise. Si l’histoire de ce mets et des institutions qui ont assuré son succès est bien documentée, les sources demeurent néanmoins nébuleuses sur le parcours de la désignation smoked-meat elle-même. Les dictionnaires produits à ce jour ne font guère exception et sont peu loquaces1. Bien des questions restent ainsi en suspens. Ce québécisme provient-il des États-Unis? Est-il calqué de la langue yiddish? Depuis quand l’utilise-t-on en français québécois? S’agit-il aujourd’hui d’un anglicisme complètement standard? Éclaircissons quelques-unes des zones d’ombres persistantes.
