Abstract
Este artículo busca ofrecer un análisis clasificatorio y descriptivo de las intervenciones del Cabildo de Buenos Aires en el abasto de carne de la Ciudad, con el objetivo de identificar y explicar las principales características de la obligación o remate del abasto de carne, los asuntos y problemas más frecuentes, su tratamiento y resolución por parte de las autoridades. Nuestra hipótesis sostiene que el monopolio fue el principal mecanismo de abastecimiento alimenticio entre las décadas de 1720 y 1750, pero que, dentro de dicho período, se fueron dando importantes cambios en las prácticas ganaderas y comerciales. Para cumplir con lo planteado, nos basamos en el análisis sistematizado de los Acuerdos del Extinguido Cabildo de Buenos Aires, relevados en el Archivo General de la Nación.
