Descripción: El curso de técnicas culinarias intermedias permitirá al estudiante profundizar y ampliar conocimientos de los insumos y técnicas culinarias correspondientes al conocimiento de proteínas carbohidratos y pastas así como practicar las reglas de organización operativa de producción con respeto de las reglas de seguridad e higiene en cocina.Propósito: El curso es de carácter teórico ¿ práctico dirigido a los estudiantes del tercer ciclo. Busca contribuir al desarrollo las competencias específicas de Chef Ejecutivo y la competencia general de pensamiento innovador ambas correspondientes al nivel 1. Para los alumnos de la carrera de Gastronomía y Gestión Culinaria el curso les dará las bases para desarrollar a futuro los cursos de Cocina Tradicional de Local a Global; Técnicas Culinarias Avanzadas y otros cursos que desarrollan técnicas especializadas.
