COMPARACIÓN DE CUATRO LÍNEAS DE TRIGO CON HARINAS COMERCIALES EN RELACIÓN A SU PERFIL DE TEXTURA, TIEMPO DE AMASADO Y VOLUMEN DE FERMENTACIÓN

Abstract
La calidad panadera del trigo se determina mediante pruebas bromatológicas y reológicas, cuyos parámetros están relacionados con las proteínas de la harina, que determinan la cantidad de agua para la hidratación y tiempo óptimo de amasado. El objetivo del presente trabajo fue comparar cuatro Harinas de Grano Entero (HGE) con dos harinas comerciales en relación a textura (Fuerza, Elasticidad y Adhesividad), tiempo óptimo de amasado y volumen de fermentación. Se realizó un diseño completamente al azar con 3 repeticiones, con cuatro tratamientos (HGE) y dos testigos comerciales: “Harina Manitoba integral” y “Harina Selecta integral”. Las variables respuesta fueron: cantidad de agua absorbida (mL), concentración de proteína (%), Tiempo de óptimo de amasado (seg), volumen de fermentación a 60 minutos (cm3), pH inicial, pH final, fuerza (N), elasticidad (mm) y adhesividad (kg/m2/s-2). Al encontrarse diferencias significativas entre los tratamientos se realizó una comparación de medias, mediante una prueba de Diferencia Mínima Significativa (DMS) al 0,05% (SAS, 2002) y una correlación de Pearson con una P≤0,05 (Minitap16, 2015). \nLa HGE PM3-BWMXL fue similar a Harina Selecta Integral en tiempo óptimo de amasado y volumen de fermentación y en textura (adhesividad) fue superior que ambas harinas comerciales estudiadas. En textura específicamente, elasticidad, la HGE PM18 Labastida fue superior a la Harina Manitoba integral. En base a los resultados obtenidos se concluye que las HGE de líneas estudiadas no cumplen con los niveles de especificación para hacer pan, sin embargo, se les puede dar el uso para hacer galletas ya que las galletas no requieren de un perfil de textura tan específico.
