Abstract
La production de fromage entraîne le rejet d'énormes quantités de résidus. Le perméat de lactosérum est une solution riche en lactose et en minéraux convenable pour la fermentation. Les réacteurs anaérobies en continu sont très efficaces pour la production d'acide propionique par Propionibacterium acidipropionici; cependant, les paramètres permettant de mesurer l'activité de dégradation de la DCO et la production d'acides organiques volatils ne sont pas au point. Cette étude apporte une lumière nouvelle sur la relation entre la quantité de protéines et la concentration d'adénosine 5'-triphosphate (ATP) pour l'évaluation de l'activité d'un bioréacteur à lit fluidisé en continu. Il y est démontré que la concentration d'ATP dans le biofilm explique mieux l'activité de diminution de la teneur en lactose exprimée en équivalents glucose et la production d'acides gras volatils que la quantité de protéines du biofilm. Une méthode novatrice de coloration et de photographie du biofilm y est aussi explorée. \n \n
