Abstract
La zéaralénone est une mycotoxine produite par des champignons du genre Fusarium retrouvée dans les céréales telles que le maïs, le blé, l'orge, l'avoine. Elle est utilisée dans certains pays (Etats unies, Canada) comme anabolisant. Son utilisation comme hormone de croissance est interdite dans les pays Européens pour ses effets indésirables. La zéaralénone et ses métabolites provoquent un syndrome œstrogènique variable selon la sensibilité de l'espèce animale, une baisse de fertilité chez les femelles et chez les mâles. Elle est également tératogène et cancérogène. Elle modifie aussi le taux d'enzymes hépatiques et d'interleukines. Elle perturbe le bilan hématologique. Elle résiste a tous les procédés de transformation, on peut donc la retrouver dans les aliments. Des moyens de lutte (mesures préventives, antioxydants, substances adsorbantes ) sont en cours de test pour limiter les contaminations animales et humaines.
