Abstract
Suomessa humalan kaupallinen viljely on pienimuotoista, mutta kotimaiselle humalalle on kysyntää. Ulkomaiset kaupalliset humalalajikkeet eivät tuota satoa Suomessa, koska ne eivät ole sopeutuneet Suomen kasvuolosuhteisiin. Vanhat suomalaiset humalakannat tuottavat satoa Suomen olosuhteissa, mutta niissä ei välttämättä ole tarpeeksi aromia ja katkeruutta oluen valmistamiseen. Opinnäytetyössä selvitettiin, löytyykö Etelä-Savosta Mikkelin alueella kasvavaa vanhakantaista humalaa, jota voidaan käyttää oluen tekemisessä. Toimeksiantajana opinnäytetyössä toimi Humalaa kasvuun -hanke. \n \nMikkelin seudulta kerättiin 14 humalakäpynäytettä vuonna 2021. Kerätyt näytteet valittiin kasvupaikan ja tiedetyn historian perusteella. Näistä näytteistä valmistettiin humalatee ja valittiin aistinvaraisen arvioinnin keinoin ne näytteet, joissa oli aromia ja mahdollisuuksia jatkokäsittelyyn. Toiset näytteet kerättiin kasvukaudella 2022. Toisten näytteiden testaamiseksi järjestettiin humalateen maisteluilta tammikuussa 2023, jossa arvioitiin aistinvaraisesti näytteiden aromia ja soveltuvuutta oluen valmistukseen. Maisteluillassa oli paikalla yhdeksän henkilöä, joista osa oli olutalan ammattilaisia ja osa harrastajia. \n \nHumalateen maisteluillassa arvioitiin viisi humalateenäytettä, sekä humalateenäytteet maltaalla maustettuna. Jokaisesta näytteestä kirjoitettiin arvio arviointilomakkeeseen. Arvioinnin tuloksena kaksi näytettä arvioitiin sellaisiksi, joissa on riittävästi aromia oluen valmistukseen. \n \nAistinvaraisen testaamisen perusteella voitiin todeta, että Mikkelin alueella on humalakantoja, jotka voivat sopia oluen valmistamiseen. Lopullinen soveltuvuus saadaan selville koekeitossa, sillä humala reagoi keittovaiheessa eri tavoin lämpöön ja ilmaan. Jatkotoimenpiteenä humalista kerätään uudet näytteet satokautena 2023 ja näistä teetetään koekeitot sekä kemialliset analyysit.
