Abstract
Cette étude traite de l'industrie québécoise de la bière au XIXième siècle à travers une importante famille de marchands-brasseurs de l'époque, la famille McCallum. En plus de situer la place qu'occupent ces marchands-brasseurs à l'intérieur de l'industrie canadienne et bas-canadienne de la bière, elle les situe à l'intérieur même de leurs entreprises en décrivant la manière dont ils se sont pris pour accaparer la majeure partie de la production et du marché de la bière à Québec. De plus, cette étude fait la lumière sur la façon dont était fabriqué ce produit, sur ceux qui le fabriquait, sur la fluctuation des prix ainsi que les facilités et les difficultés à produire cette denrée dans une économie dépendant encore en majeure partie de la métropole.
