Consommés en quantité suffisante, les stérols\nvégétaux 1 sont réputés réduire la cholestérolémie.\nPuisquâil a été déterminé que lâhypercholestérolémie\ncompte au nombre des facteurs de risque de la\ncoronaropathie, la promotion de cet effet\nhypocholestérolémiant en commercialisant des produits\nenrichis en stérols végétaux au sujet desquels des\nallégations santé sont formulées suscite un intérêt\nimportant au sein de lâindustrie alimentaire. En réponse aux demandes de lâindustrie, la Direction des aliments de\nSanté Canada a évalué la validité de cet effet allégué, de\nmême que lâinnocuité de lâadjonction de stérols végétaux\naux produits alimentaires.
