Abstract
El presente trabajo de investigación trata sobre la elaboración y comercialización de un suplemento nutricional que tiene como materia prima principal el polvo de harina de hongo comestible de Marayhuaca, endulzado con panela orgánica, cuyo nombre comercial será “Total Pro Z” en dos presentaciones: ChocoZeta y VainiZeta. El hongo comestible de la variedad “Suillus Luteus”, crece en la zona altoandina específicamente en la comunidad de San Isidro Labrador de Marayhuaca, en el departamento de Lambayeque, en simbiosis con los árboles de pino radiata. Posee un alto porcentaje de proteínas, 20% a 40% de su peso seco, que se iguala al de las leguminosas, por ello son denominados “carne de bosque”. También cuenta con ciertas vitaminas: tiamina (vitamina B1), vitaminas C y B12; minerales como el fósforo, calcio, potasio, selenio y ácido fólico. Otro de sus beneficios es que tiene propiedades anticancerígenas y antitumorales. Por otro lado, los hongos comestibles “Suillus Luteus” no solo crecen en Lambayeque, sino también en otras regiones de nuestro país, en menor medida, tales como: Cajamarca, Huancavelica, Cusco, Junín, Arequipa y Puno.
