Abstract
Opinnäytetyön tarkoituksena oli selvittää ylämaankarjan maidon koostumus. Työ tehtiin yhteistyössä Suomen Highland Cattle Club ry:n kanssa. Päähuomio kiinnitettiin rasvan ja valkuaisen pitoisuuksiin, mutta myös urea- ja laktoosiarvoja selvitettiin. Tutkimusaineistona oli kesän ja syksyn 2010 aikana otetut maitonäytteet. \nEmolehmätuotannossa maidon koostumukseen ei yleensä kiinnitetä huomiota. Siitä ei myöskään ole olemassa paljoa tutkimustuloksia maailmalta saati Suomesta. Ylämaankarjan maidon koostumusta ei ole aikaisemmin tutkittu lainkaan. \nTutkimukseen osallistui seitsemän ylämaankarjatilaa. Lehmistä otettiin 1-3 maitonäytettä lypsykauden aikana. Mukana oli 59 emolehmää ja kaikkiaan maitonäytteitä otettiin 116 kappaletta. Maidosta tutkittiin rasva-, valkuais-, urea- ja laktoosipitoisuus. Näytteet analysoitiin Valion Seinäjoen aluelaboratoriossa. Saadut tulokset analysoitiin SPSS-tilasto-ohjelmalla. \nSaatujen tulosten pohjalta näyttäisi siltä, että ylämaankarjan maito ei koostumukseltaan suuresti poikkea muiden emolehmien maidoista. Valkuaispitoisuus ylämaankarjan maidossa on korkea. Rasvapitoisuus jäi tässä tutkimuksessa alhaiseksi johtuen näytteenoton muuttuvista tekijöistä. Tutkimusta voivat hyödyntää ylämaankarjan kasvattajat suunnitellessaan ruokintaa sekä jalostusta. Suomen Highland Cattle Club ry voi hyödyntää tämän työn tuloksia kehittäessään emolehmätuotannon ohjausta sekä koulutusmateriaalina koulutustilaisuuksissa.
