Abstract
Cette étude examine le patri- moine viticole romain inexploité dans le sud-ouest de la péninsule Ibérique, notam- ment en Espagne (Bas-Guadalquivir) et au Portugal (Alentejo). Malgré l’im- portance des régions actuelles comme Jerez-Sherry, il existe une déconnexion avec les traditions anciennes, les pratiques modernes dominant. En analysant des sites clés comme la villa São Cucufate et en proposant des actions conformes aux protocoles européens, l’étude souligne la nécessité de valoriser ce patrimoine pour le tourisme et la société, tout en abordant les problèmes structurels.
