Abstract
El neuromarketing es una rama joven y multidisciplinar capaz de ser utilizada en ámbitos divergentes como el turismo, la publicidad o la gastronomía. En estos sectores, entender cómo los estímulos culturales son percibidos por los turistas, es clave para potenciar los numerosos productos y servicios ofertados. En este escenario, el cochinillo segoviano no es solo un plato; su impacto emocional despierta contradicciones inconscientes en turistas de todo el mundo. Este Trabajo de Fin de Grado, busca explorar las reacciones emocionales y perceptivas de los diferentes perfiles culturales de los individuos en torno a una experiencia gastronómica diferencial que tiene como protagonista al cochinillo. Con el objetivo de encontrar patrones que pongan de manifiesto la magnitud de agrado/desagrado del plato, mediante su presentación en diversos contextos y formas, se realizó un diseño experimental 2 por 5 mediante herramientas biométricas: eyetracking y facial coding. Los resultados muestran diferencias significativas sobre cómo la cultura moldea estas percepciones y emociones. Además, ofrece insights valiosos para la elaboración de estrategias de promoción turístico-gastronómicas internacionales construyendo una comunicación culturalmente ética, inclusiva y memorable.
