The role of diet in the prevention of chronic disease is well established: fruit and vegetable consumption has a strong protec-tive effect on the development of cancer at numerous sites;1 saturated fat intake is clearly associated with coronary heart dis-ease;2 and the total direct cost of obesity in Canada was estimated to be $1.8 billion for 1997.3
