En la zona rural de Berisso (Municipio costero de la Pcia de Bs As, Argentina) se producen diferentes cultivares de ciruelo (Prunus salicina Lindl) para consumo en fresco y procesado, destacándose Cristal, Remolacha, Genovesa, Abundancia (típica de la isla Paulino) y Gómez. Desde hace varios años los productores elaboran de manera artesanal una bebida fermentada, que denominan vino o fermentado de ciruela, entre los meses de Diciembre y Febrero, dependiendo del momento oportuno de cosecha de cada cultivar. Actualmente una gran parte del fermentado se elabora en la Cooperativa de la Costa de Berisso y otra lo hacen productores en sus respectivas quintas. Ante la necesidad de incluir la bebida en la normativa obligatoria, se inició en el 2010 un trabajo interdisciplinario de investigación que incluyó el registro y seguimiento de la producción primaria y el estudio del proceso de vinificación. En el presente trabajo se muestran los resultados del análisis de las ciruelas y el vino, el estudio de la fermentación, la problemática del metanol y la identificación de levaduras ecotípicas involucradas en la fermentación espontánea.
