Abstract
El presente trabajo surge de una idea de negocio de las estudiantes Patricia y Paola Andrea, el cual consiste en el montaje de un Restaurante Campestre en el Departamento del Quindío aprovechando el paisaje y los recursos naturales que la región posee; de ahí que el nombre del restaurante sea alusivo a la tradición y cultura del departamento. Además el sector de alimentos y bebidas está fortaleciéndose en el campo empresarial, convirtiéndose en auge de desarrollo económico y social, debiéndose analizar aspectos tangibles e intangibles del producto final del restaurante. Por ende se han desarrollado una serie de investigaciones y estudios a nivel de mercado, organizacional, legal, ambiental y económico-financiero, donde de acuerdo a los resultados obtenidos se podrán identificar las fortalezas y debilidades del mencionado proyecto, para lo cual permitirá determinar la viabilidad del mismo.
