En este proyecto se logró la elaboración de un vino de frutas a base de uvita de lata (bactris minor). La cual es una planta perteneciente a la familia palmácea, se da en la costa caribe, generalmente en terrenos cenagosos y con problemas de drenajes. Durante cuatro años se realizaron estudios exploratorios en el municipio de san Alberto- cesar, con el fin de establecer parámetros para proceso de elaboración del vino de frutas de uvita de lata. Para ello se tuvieron en cuenta algunas variables como tiempo de fermentación, macerado y cantidad de azúcar. El proceso de elaboración del vino de frutas de uvita de lata consiste en lavar los frutos, desinfectarlos y macerarlos para luego agregar el azúcar en la cantidad adecuada y poner el mosto en fermentación por un tiempo determinado de 10 meses para lograr un producto con las características organolépticas adecuadas. Además, se realizaron análisis microbiológicos y fisicoquímicos al producto terminado, y por los resultados obtenidos se concluyó que este producto cumple con los parámetros legales vigentes y por lo tanto es apto para el consumo humano, adicionalmente se realizaron unas pruebas sensoriales y de aceptación, por los resultados obtenidos se concluye que el producto es bastante aceptable y que es muy agradable al paladar 1 1
