Abstract
The bachelor thesis deals with the characteristics of the genus Vaccinium L., in particular the description of the genus and varieties. It focuses on the description of the genus and varieties and the possibility of processing its varieties, the chemical composition of the fruits and their health significance. Last but not least, it describes the possibilities of processing the fruit. The experimental part is devoted to the analytical analysis of canadian blueberry fruits and the possibilities of processing its varieties. Fruits of selected varieties were processed and two types of products were subsequently produced. A fruit spread and a fruit drink. The products were subjected to analytical analysis and subsequent sensory evaluation. Based on the results obtained, suitable varieties were recommended for processing.
