Reflections of Gastronomic Identity on Consumption Behaviors: The Case of Siirt

Abstract
Bu çalışma, Siirt ilinde yaşayan bireylerin geleneksel ve modern yiyecek tüketim alışkanlıklarını inceleyerek gastronomik kimliğin tüketim davranışları üzerindeki yansımalarını ortaya koymayı amaçlamaktadır. Nicel araştırma yaklaşımı çerçevesinde yürütülen çalışmada veriler, Siirt merkez ve ilçelerinde yaşayan 170 katılımcıdan Karamustafa, Birdir ve Kılıçhan (2016) tarafından geliştirilen Gastronomik Akımlar Çerçevesinde Gıda Tüketim Ölçeği kullanılarak toplanmıştır. Elde edilen veriler açıklayıcı faktör analizi, bağımsız örneklem t testi ve tek yönlü varyans analizi ile değerlendirilmiştir. Bulgular, geleneksel Siirt yemeklerinin düşük düzeyde tüketildiğini, buna karşılık fast food ve hazır gıdaların daha düzenli biçimde tercih edildiğini göstermektedir. Büryan kebabının diğer geleneksel yemeklere kıyasla daha yüksek tüketim düzeyine sahip olduğu, zingil tatlısının ise en düşük tüketilen ürün olduğu belirlenmiştir. Yiyecek seçiminde sağlık unsurunun öne çıktığı ve tüketimin büyük ölçüde ev ortamında gerçekleştiği tespit edilmiştir. Demografik değişkenler çerçevesinde geliştirilen hipotezlerin büyük bir kısmının desteklendiği, geleneksel yemek tüketiminin cinsiyet, medeni durum, yaş, eğitim ve çalışma durumu açısından farklılaştığı, gelir değişkeni açısından ise anlamlı bir farklılaşma göstermediği görülmektedir. Modern yemek tüketiminin ise medeni durum, yaş ve eğitim değişkenleri açısından farklılaştığı, buna karşılık cinsiyet, çalışma durumu ve gelir değişkenleri bakımından anlamlı bir farklılık göstermediği belirlenmiştir. Sonuç olarak çalışma, Siirt gastronomik kimliğinin gündelik yaşam içinde belirli ürünler üzerinden sınırlı bir görünüm sergilediğini ve bu yapının demografik farklılıklar ile birlikte değişebildiğini ortaya koymaktadır.
