Abstract
La producción de orellanas ha emergido como una actividad crucial en la industria de los hongos comestibles, Desde su llegada a Colombia en la década de 1990, su cultivo se ha caracterizado por un enfoque en la sostenibilidad y la economía circular, aprovechando una amplia gama de residuos agrícolas, forestales e industriales como sustratos. El artículo ofrece una revisión analítica de la producción de hongos comestibles, centrándose especialmente en el Pleurotus ostreatus, mediante la recopilación y clasificación de fuentes temáticas relevantes, de igual forma se examina los métodos de cultivo, prácticas agronómicas, tendencias comerciales y requisitos normativos internacionales. También se describe el proceso de cultivo de orellanas, desde la inoculación hasta la etapa productiva, con discusiones sobre estrategias para controlar contaminantes y plagas. En cuanto al mercado colombiano de orellanas, se destaca el uso de sustratos, el estado actual de la producción, la gestión de residuos orgánicos y las barreras comerciales. Se abordan las normativas y certificaciones necesarias para la exportación, así como los tratados de libre comercio que ofrecen ventajas en la eliminación de aranceles y acceso preferencial a mercados extranjeros como Estados Unidos, Canadá y la Asociación Europea. Finalmente, se enfatizan la importancia de las buenas prácticas agrícolas, las condiciones óptimas de cultivo y las oportunidades de exportación. The production of oyster mushrooms has emerged as a crucial activity in the edible mushroom industry. Since its arrival in Colombia in the 1990s, its cultivation has been characterized by a focus on sustainability and the circular economy, leveraging a wide range of agricultural, forestry, and industrial residues as substrates. The article provides an analytical review of edible mushroom production, focusing especially on Pleurotus ostreatus, through the collection and classification of relevant thematic sources. Similarly, it examines cultivation methods, agronomic practices, commercial trends, and international regulatory requirements. It also describes the cultivation process of oyster mushrooms, from inoculation to the productive stage, with discussions on strategies for controlling contaminants and pests. MRegarding the Colombian oyster mushroom market, the use of substrates, the current state of production, organic waste management, and commercial barriers are highlighted. Regulations and certifications necessary for exportation are addressed, as well as free trade agreements that offer advantages in tariff elimination and preferential access to foreign markets such as the United States, Canada, and the European Association. Finally, the importance of good agricultural practices, optimal growing conditions, and export opportunities are emphasized.
