El estado de salud de una persona es la resultante de la combinacion de distintos factores, dotacion genetica, edad, situacion nutricional, actividad fisica, asi como factores medioambientales, higiene, salubridad, estres, tabaco.(1,2) La existencia de malos habitos de alimentacion y de otros factores de riesgo, conduce a un aumento en el riesgo de desarrollar enfermedades cronicas, obesidad, diabetes, enfermedad cardiovascular, osteoporosis y determinado tipo de cancer. Enfermedades que vienen ocupando las mayores tasas de morbilidad y mortalidad en los paises europeos. Esta situacion parece justificar que en nuestro pais se esta produciendo una defectuosa intervencion sobre distintos factores de riesgo, o quizas un empeoramiento en el control de algunos de ellos, donde la dieta y el estilo de vida parecen claramente implicados. Parece claro que si tomamos como base los determinantes angulares para la salud cardiovascular identificados en la Declaracion de Victoria sobre Salud Cardiaca (Canada. 1992), habitos de alimentacion saludables, estilo de vida exento de tabaco, actividad fisica regular y ambiente psicosocial favorable, las perspectivas en un futuro proximo en nuestro pais no parecen muy favorables.
