Natural Antibodies to Pathogenic Bacteria and their Toxins in Whey Protein Concentrate

Abstract
ウシ生乳に含まれる抗体の有効利用を目的として,乳清(ホエー)のタンパク部分を濃縮して得られた乳清タンパク濃縮物(WPC)に含まれる抗体量およびその特異性を調べた.ヒト由来病原菌33種とエンドトキシン,エンテロトキシン,lipid Aなど5つの細菌毒素を指標に抗体の検出と定量を試みた.その結果,33種の細菌と5種の細菌毒素全てに対する抗体が検出された.このことは,今回の抗体検索に用いなかった細菌や毒素に対する抗体も含まれる可能性を示唆した.また,細菌菌体による吸収試験から,WPCには複数の細菌に対して広範に反応し得る抗体が含まれることが明らかとなった.以上,ウシの乳に含まれる抗体を利用するに当たり,ウシに病原微生物による免疫を施さなくても,WPC中にはヒト病原菌に対する抗体が含まれることを示した.しかし,WPC中の総IgG含有量は必ずしも個々のヒト病原菌に対する抗体量とは相関しなかったことから,ヒトの健康への寄与を意図してWPCを使用するためには,目的とする細菌や毒素に対する個別の抗体量を把握することが重要と考えられた.
