En hommage à Susanna Barrows, au carrefour de quelques thèmes qui lui étaient chers – l’histoire culturelle alliant pratiques et représentations, celle des femmes et des genres, celle de la littérature médicale prescriptive, et enfin celle des buveurs –, cet article se penche sur une profession entièrement féminine, largement oubliée, mais pourtant située jadis au cœur du complexe thermal français, du xviii e au xx e siècle. Il s’agit des « donneuses d’eau », dont la représentante peut-être la plus connue demeure Coco Chanel, qui pratiqua cet emploi de manière occasionnelle avant de connaître le succès que l’on connaît. À partir de sources multiples et variées, j’analyse leur relation à la source et à la clientèle, leur rôle paramédical, ainsi que des questions de sociabilité, de mise en scène, de sexualité et de genre.
