Abstract
Millions of workers worldwide participate in some aspect of food preparation, service, and farming. Exposure to a wide variety of food-derived and food-associated materials encountered in the workplace can be associated with the development of occupational asthma (OA), occupational rhinitis (OR), hypersensitivity pneumonitis (HP), and occupational dermatitis (OD) in sensitized individuals. A diagnosis of one of these occupational diseases can have significant social and economic impact on both the individual and society as a whole. Diagnosing and treating an occupational disease is often difficult. As new agents causing occupational hypersensitivities are being reported, clinicians must be aware of potential causes, diagnostic approaches, treatment, and prognosis when treating these patients; this will be discussed in greater detail in this chapter.
