Jean Magnol (1562- 1632), Ardéchois d'origine, vint à Montpellier pour apprendre le métier d'apothicaire. Il illustre une période de transition entre les statuts médiévaux de la profession et ceux de la Renaissance (1572-1598), dans une ville réputée pour son École de médecine. C'est le cas unique d'un compagnon apothicaire servant en boutique comme gérant pendant treize ans. Par le contrat de bail relatif à la gérance, on apprend que le métier d'apothicaire pouvait être assimilé à celui de droguiste. Mais les statuts de 1572 à Montpellier signent une organisation laïque du collège des apothicaires. Approuvés par le roi ils ont force de loi, hissant ainsi la profession à celui de gens de robe, séparant l'apothicaire de l'épicier bien avant le statut royal de 1777 signé par Louis XIV et applicable à toute la France. Pour obtenir sa maîtrise, J. Magnol devra faire ses chefs-d'oeuvre dont les formules se trouvent dans la Pharmacopoea Monspeliensis , codex imposé par les nouveaux statuts. Il faut signaler que l'exercice pratique se fera chez les novateurs des statuts de 1572, maîtres apothicaires montpelliérains de grande renommée. Jean Magnol est l'ancêtre de Pierre Magnol (1638-1715), eminent botaniste à qui Cari Linné a dédié le genre magnolia.
