Abstract
The materials describing morphological composition of the carcass and its natural anatomical parts obtained from the slaughter of Hereford and Simmental heifers of different genotypes at the age of 21 months are submitted in the article. The importance of studies on beef performance of steers, as well as of the mother population as an additional contingent of slaughter cattle, has been substantiated. The detailed picture of the overall morphological composition of half-carcasses of animals by such parameters as flesh, bones, cartilages and tendons is presented. Moreover, the advantages of animals, with the blood share of German and Canadian Simmentals, by the absolute indices of the amount of flesh, bones, cartilages and tendons and the relative flesh weight (especially with the share of blood of Canadian Simmentals), are confirmed on the basis of accuracy of the indices difference. The indices of carcass meatiness, according to which the animals with the blood share of imported Simmentals are inferior only to Herefords, are suggested. The relationship of some natural anatomical parts in a half carcass, in terms of the genotypes under study, i.e. flesh, bones and tendons, both in the absolute and relative expression, is shown. The advantages of animals, with a share of blood of imported Simmentals, by the absolute and in-parts weight of the jugular and hip parts over the Simmental and Hereford beef animals are pointed out. The animals with the blood share of Canadian selection by all the natural anatomical parts, except for the jugular part, were second by the share of flesh in the butt, which indicates the meat quality of animals of this genotype.
